Stitch & Weave Exclusive Single Casks - Cask No.1 "Una"

Stitch & Weave are proud to introduce Cask No. 1, the inaugural release in our new Exclusive Single Cask Series.
For our first release, we selected a 7-year-old double-distilled Irish malt whiskey from Great Northern Distillery, before taking the whiskey on the final stage of its journey in a specially sourced 64-litre Pedro Ximénez sherry cask from Casknolia.
The PX finish has transformed the whiskey, layering the character of the mature double-distilled malt with the deep, luxurious flavours associated with Pedro Ximénez sherry — dark fruits, raisins, figs, rich caramel and chocolate, balanced by warming oak and spice.
Bottled at its natural cask strength of 51.93% ABV, the whiskey retains the richness, weight and intensity that made us choose it for our first release.
This is exactly what we want the Stitch & Weave Exclusive Single Cask Series to represent: exceptional Irish whiskey, carefully selected casks and genuinely individual releases chosen by us to be shared with our customers and friends.
Cask No. 1. The first stitch in the story.
Nose: Rich PX sweetness immediately comes through with raisins and dried figs, followed by sticky toffee, vanilla and caramelised sugar. Given time in the glass, darker notes of chocolate and toasted nuts appear alongside the underlying malt and a gentle spice.
Palate: Rich and full-bodied. Dark dried fruit, raisins and figs lead into layers of sweet toffee, caramel and vanilla. The malt gives the whiskey weight through the middle before developing into dark chocolate and warming baking spices. At 51.93%, there is plenty of cask-strength intensity, but the PX sweetness provides balance.
Finish: Long and warming, with lingering dark fruit, chocolate and caramel, followed by toasted oak and a gentle spice.
